A refined twist on a classic breakfast indulgence (inspired by the McGriddle!)
Maple Pancake Breakfast Muffins
- 1 pkg maple syrup breakfast sausage (casings removed)
- 1/2 cup shredded cheese
- 1/2 cup pure maple syrup
- Pancake mix – use your fave recipe! This would also work will gluten free mix.
My recipe for pancakes: 2 eggs, 1 cup milk, 2 tbsp oil, 1 1/4 cups flour, 1 tbsp sugar, 1 tbsp baking powder, 1 tsp pink Himalayan salt.
- Cook the sausage in a pan. Once cooked, put the sausage onto a plate with paper towel to soak up any grease.
- Make your pancake mix. Add the sausage, shredded cheese and maple syrup and stir.
- Grease a muffin tin and pour in mixture.
- Bake at 350F for 20 minutes or until golden. Enjoy!!
Servings: Makes 12 muffins
