Chicken, Squash and Kale Hash

This Chicken, Squash and Kale Hash is my go-to comfort meal as soon as the squash hits the farmer’s market stands in fall. It comes together in just 30 minutes and really is fall in a pan. Hope you enjoy!

  • 1 pkg ground chicken
  • 1 onion, diced
  • 1 acorn squash, diced
  • 1 McIntosh apple, diced
  • 1-2 handfuls of chopped kale
  • Salt and pepper
  • Red pepper flakes
  • Garlic powder
  • Thyme
  • Nutmeg
  • Coconut oil
  • Olive oil
  1. Add diced squash to a baking sheet and toss with olive oil, salt and pepper. Bake at 350F for 20 minutes.
  2. In a medium pan, add coconut oil. Add diced onions and saute.
  3. Add ground chicken, all of the spices and stir. Note – I don’t measure my spices, just eyeball it and add as you prefer.
  4. Add diced apple and stir until it starts to get soft.
  5. Add the roasted squash to the pan and stir.
  6. Add in a handful or two and stir. Saute until the kale becomes wilted and tender (about 5 minutes).
  7. Serve and enjoy!
