This Chicken, Squash and Kale Hash is my go-to comfort meal as soon as the squash hits the farmer’s market stands in fall. It comes together in just 30 minutes and really is fall in a pan. Hope you enjoy!
- 1 pkg ground chicken
- 1 onion, diced
- 1 acorn squash, diced
- 1 McIntosh apple, diced
- 1-2 handfuls of chopped kale
- Salt and pepper
- Red pepper flakes
- Garlic powder
- Thyme
- Nutmeg
- Coconut oil
- Olive oil
- Add diced squash to a baking sheet and toss with olive oil, salt and pepper. Bake at 350F for 20 minutes.
- In a medium pan, add coconut oil. Add diced onions and saute.
- Add ground chicken, all of the spices and stir. Note – I don’t measure my spices, just eyeball it and add as you prefer.
- Add diced apple and stir until it starts to get soft.
- Add the roasted squash to the pan and stir.
- Add in a handful or two and stir. Saute until the kale becomes wilted and tender (about 5 minutes).
- Serve and enjoy!
