There’s something about this salad that just feels like a little moment of balance—crisp, creamy, peppery, sweet. It comes together in minutes, but tastes like you gave it a lot more thought. The sharp bite of arugula, the creaminess of feta, and the sweetness of thin apple slices… it’s fresh, a little fancy, and honestly kind of addictive. Perfect as a side, but I’ve definitely made a meal out of it more than once.
- Arugula
- 1 Apple, diced
- Feta, crumbled (I use about 1/2 cup)
- Pumpkin Seeds
- Salt and pepper
- Olive Oil
- Apple cider vinegar
- Maple syrup
- Garlic powder
- Dice the apple.
- In a bowl, add olive oil, apple cider vinegar, maple syrup, salt and pepper and garlic powder. Stir well until combined.
- Add arugula, apples, feta and pumpkin seeds. Mix and enjoy!
