Arugula, Apple & Feta Salad

There’s something about this salad that just feels like a little moment of balance—crisp, creamy, peppery, sweet. It comes together in minutes, but tastes like you gave it a lot more thought. The sharp bite of arugula, the creaminess of feta, and the sweetness of thin apple slices… it’s fresh, a little fancy, and honestly kind of addictive. Perfect as a side, but I’ve definitely made a meal out of it more than once.

  • Arugula
  • 1 Apple, diced
  • Feta, crumbled (I use about 1/2 cup)
  • Pumpkin Seeds
  • Salt and pepper
  • Olive Oil
  • Apple cider vinegar
  • Maple syrup
  • Garlic powder
  1. Dice the apple.
  2. In a bowl, add olive oil, apple cider vinegar, maple syrup, salt and pepper and garlic powder. Stir well until combined.
  3. Add arugula, apples, feta and pumpkin seeds. Mix and enjoy!
