If you’re stuck trying to find a new zucchini recipe – this one is for you! Mücver is one of my favourite Turkish recipes. This recipe is full of flavour with so many fresh herbs and spices. I have made this version gluten free and baked in the air fryer. It is the perfect side dish for any meal or enjoy it as a lunch with a yogurt dip! 😋

Recipe:
- 4 medium zucchini, shredded
- 4-5 green onions, diced
- 1/2 cup parlsey, chopped
- 1/4 cup dill, chopped
- 1 small onion, grated
- 1 cup feta cheese
- 3 cloves garlic, grated
- 3 eggs
- 1/3 cup almond flour
- Turkish biber
- Salt and pepper
- Garlic powder
- Olive oil
- Cut the ends off your zucchini and peel a few strips from each one. Grate the zucchini.
- Add shredded zucchini to a kitchen towel or cheese cloth and squeeze to drain out any excess moisture.
- Put the zucchini in a bowl. Add the green onion, parsley, dill, onion, feta cheese, garlic, eggs and almond flour. Add spices.
- Mix well until all ingredients are combined.
- Preheat the air fryer to 350 degrees Fahrenheit. Swipe the inside with some olive oil.
- Scoop your mücver mixture with a spoon into the air fryer and slightly flatten. Bake at 350 for 12 mins.
✨Tip – halfway through your bake time, swipe your mücver with a bit of olive oil for some extra flavour. Once they are done, add them to a plate to cool and sprinkle with some salt.
