I had a few extra cucumbers in the fridge and turned them into the coziest creamy soup! Simple ingredients, minimal effort and full of flavour. Perfect for a light lunch or an easy dinner (especially when you don’t want to waste what’s already in your fridge!) You can make this recipe with any veggies you have in your fridge. Stick with the same base and swap out the cucumber for broccoli, cauliflower, etc. or a mix of veggies!
• Olive oil, butter, onion, carrot, potato and cucumber
• Simmered, blended, and seasoned with Turkish biber, cumin, paprika, salt & pepper (you can add any spices you like)
• Topped with yogurt and fresh parsley
