French onion soup kinda day. Slow, simple and so worth it. This soup is perfect for a cozy rainy day like today. My husband was craving this soup and I’m so glad he was. Onions, cheese, and toasty baguette – this is everything you need for total comfort.
Ingredients:
- 2-3 yellow onions, thinly sliced
- 3 tbsp butter
- 2 tbsp flour
- 3 tbsp mustard
- 1 litre broth (we used better than bouillon paste and mixed with water)
- Olive oil
- Salt and pepper
- Garlic powder
- Gruyère cheese, shredded
- French baguette, sliced
- Thinly slice the onions. Shred the cheese and slice the baguette and put aside.
- In a pot, add butter and olive oil. Once the butter is melted, add in the sliced onions and stir. Add some salt. Sauté for 10 minutes.
- Add mustard and stir. Add flour and stir again.
- Pour in the broth and stir well ensuring all of the flour and mustard is combined.
- Add salt, pepper and garlic powder. Stir. Keep at a simmer for 20-30 minutes and in the meantime preheat the oven to 375F.
- Ladle soup into oven safe bowls. Add two slices of baguette to each bowl and sprinkle with Gruyère cheese.
- Bake in the oven at 375F until the cheese is melted. You can broil it for the last minute or two for an extra golden top.
- Let it cool for a few minutes and enjoy! 😋
