French Onion Soup

French onion soup kinda day. Slow, simple and so worth it. This soup is perfect for a cozy rainy day like today. My husband was craving this soup and I’m so glad he was. Onions, cheese, and toasty baguette – this is everything you need for total comfort.

Ingredients:

  • 2-3 yellow onions, thinly sliced
  • 3 tbsp butter
  • 2 tbsp flour
  • 3 tbsp mustard
  • 1 litre broth (we used better than bouillon paste and mixed with water)
  • Olive oil
  • Salt and pepper
  • Garlic powder
  • Gruyère cheese, shredded
  • French baguette, sliced
  1. Thinly slice the onions. Shred the cheese and slice the baguette and put aside.
  2. In a pot, add butter and olive oil. Once the butter is melted, add in the sliced onions and stir. Add some salt. Sauté for 10 minutes.
  3. Add mustard and stir. Add flour and stir again.
  4. Pour in the broth and stir well ensuring all of the flour and mustard is combined.
  5. Add salt, pepper and garlic powder. Stir. Keep at a simmer for 20-30 minutes and in the meantime preheat the oven to 375F.
  6. Ladle soup into oven safe bowls. Add two slices of baguette to each bowl and sprinkle with Gruyère cheese.
  7. Bake in the oven at 375F until the cheese is melted. You can broil it for the last minute or two for an extra golden top.
  8. Let it cool for a few minutes and enjoy! 😋
