It’s giving summer café vibes 🍒☁️ This gluten-free cherry yogurt cake is moist, fresh and so easy to make. One bowl, no mixer and that drizzle on top? Totally optional (but highly encouraged 😍).
You’ll need:
- 1 cup oat flour (I have a DIY oat flour post on the blog)
- 2 eggs
- 1/3 cup + 1 tbsp plain yogurt
- 1/4 cup maple syrup (or honey)
- 1/2 tsp baking powder
- 1/2 tsp vanilla
- Pinch of salt
- 1 cup fresh cherries 🍒
- Preheat your oven to 350F. Grease a small cake pan.
- In a bowl, whisk together the eggs, yogurt, maple syrup and vanilla.
- Add the oat flour, baking powder and salt. Mix well.
- Add your cherries and gently mix together.
- Pour the batter into your cake pan and spread evenly.
- Bake at 350F for 25 minutes.
- Enjoy 😋💕
For the glaze: Add a couple tbsp of icing sugar to a bowl, slowly add water and a splash of vanilla. Mixing until your desired consistency.
