There’s nothing better than fresh strawberries in the summertime 🍓 I had to make a strawberry version of my fresh cherry yogurt cake and I think this one may be even better 😉 this is the perfect gluten-free dessert and takes only 10 minutes to put together. It is so moist and even better with a dollop of fresh whipped cream and some more strawberries on top! Hope you enjoy 💕
You’ll need:
- 1 cup oat flour (see my previous reel for a DIY version)
- 2 eggs
- 1/3 cup + 1 tbsp plain yogurt
- 1/4 cup maple syrup (or honey)
- 1/2 tsp baking powder
- 1/2 tsp vanilla
- Pinch of salt
- 1 cup fresh strawberries, diced
- Preheat your oven to 350F. Grease a small cake pan.
- In a bowl, whisk together the eggs, yogurt, maple syrup and vanilla.
- Add the oat flour, baking powder and salt. Mix well.
- Add your strawberries and gently mix together.
- Pour the batter into your cake pan and spread evenly.
- Bake at 350F for 25 minutes.
