Summer Plum Galette

This is one of my go-to summer desserts! It’s super simple and so good with summer plums but you can totally swap them out for peaches or apples. It comes out buttery, crisp and jammy in the middle. Save this one, you’ll want it on repeat. 💕✨

Recipe:

Crust:
1 3/4 cups flour
1 tsp sugar
1 cup cold butter, unsalted
1/4 to 1/2 cup ice cold water (I will put ice cubes in the water ahead of time to make sure it’s ice cold)
1 egg
Sprinkle of cinnamon sugar

Filling:

4 plums
1/4 cup sugar
1 tbsp cornstarch
1 tsp cinnamon
Pinch of salt

  1. To a bowl, add flour, sugar, cubed cold butter and mix with a pastry blender or fork (hands are okay too!).
  2. Add cold water, starting with 1/4 cup and add more as needed. Mix with your hands until you start to get a dough consistency. Form the dough into a ball, cover and store in the fridge for at least 30 minutes.
  3. Meanwhile, slice the plums. Add the plums to a bowl with sugar, cornstarch, cinnamon and salt. Stir until combined and put aside.
  4. Preheat the oven to 375F.
  5. Remove the dough from the fridge and roll it out in a floured surface. Roll until to 1/2 inch thickness and then move the dough to a parchment lined baking sheet.
  6. Start layering the plums in the middle of the dough slightly overlapping as you go. Trim the edges of the dough to ensure you have an even amount on each side.
  7. Fold up the edges of the dough, slightly overlapping each fold.
  8. Brush the crust with egg wash for the golden glow and sprinkle with cinnamon sugar to finish!
  9. Bake at 375F for 35 minutes or until golden ✨ enjoy! 😋
